Persimmons
have two classes: those that bear astringent fruit and
cannot be eaten until soft ripe and those that bear
non astringent fruit that can be eaten hard and crisp
or soft.

Rama
Forte persimmon is flat, red and can be eaten
soft.
It’s rich in starch, pectin and sugars mainly
glucose, it is not acid. |

Preferably
eaten when crunchy, Giombo is Acorn-flattened.
When green is rich in tannin and as it ripes,
it becomes sugars. When green it is astringent,
as it grows part of it becomes sugar and othe
part is used up in respiration. |

Similar
to Giombo, Fuyu persimmon, is a red-orange shaped
fruit. Preferably eaten crunchy, it is rich in
vitamins A and C.
Fuyu persimmons are often called “fruit
of the gods”. |
