Persimmon
varieties, according to fruit caracteristics can be
grouped into three different classes: tannin, non tannin
and varied.
Tannin (Shibu) – Varieties
of tannin pulp, yellow color, seeded or unseeded, e.g.
Pomelo, Rubi, Taubaté and Rama Forte.
Non Tannin – Varieties that are
always sweet with yellow pulp, seeded or unseeded, e.g.
Fuyu, Girô, Fuyuhana, Isahaya, Taysiu.
Varied – Varieties with tannin
pulp and yellow color when unseeded. And non tannin,
totally or partially, when containing one or more seeds.
If seeds are in great number, pulp is dark, whereas,
fruits with fewer seeds, the dark color happens around
the seeds, generating what is called “chocolate”.,
