Persimmons
are found in many different types, sometimes from spherical
to acorn to flattened or square-ish. Skin and pulp also
suffer alteration according to type or for being seedless.
Oriental persimmons produce flowers that are male, female,
and/or perfect (male and female flower parts present
in the same flower. Some varieties produce fruit from
flowers when pollination has not occurred. These fruit
contain no seeds.
Classes are:
Shape
Seedless Spherical to acorn fruit become flattened,
when seeded.
Size
Not all fruit suffer alteration
when seeded or seedless, but some types tend to produce
smaller fruit when seeded.
Texture and color
These caracteristics are related to differences in soil
structure. Therefore, when the fruit belongs to the
varied type, there is one or more seeds, the pulp color
is altered from yellow to “chocolate”; and
astringency also disapears around the seeds.
Ripening season
Seeded fruit tend to ripe early, in contrast to seedless
fruit of the same type.
The color of the fruit varies from light yellow-orange
to dark orange red because of carotene. Astringency
occurs because of water soluble plain tannin, but on
the other hand, grumous, polymeric tannin does not show
astringency because it is insoluble in water. |
